Mugaritz, the number three restaurant in the world and proof that a Michelin star doesn't mean very much, has reopened for this year's season. The menu is totally changed, with only one dish that remains from last year. It's a mortar with seeds and peppercorns, and it arrived to all the tables at the same time. Diners began to grind and pound, filling the restaurant with the clanking sound of metal and rock. Later, a broth is poured over-pure, simple genius.
